Delicious Eggless Whole-Wheat Waffles! My new breakfast favorite that doesn't make me feel like I am indulging!

Ingredients for Healthy and Delicious Eggless Whole Wheat Waffles

  • 1/2+ C oats
  • 1 1/2 + cup whole wheat (the 1/2 cup may be white flour if preferred)
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 Tbsp sugar
  • 4-5 Tbsp applesauce
  • 1 cup sour milk (milk with 1Tbsp lemon juice)
  • 1+Tbsp water as needed to thin mixture as preferred
  • Handful chocolate chips
Mix it all together the classic Katie way, which is to say, adding and substituting until you are happy with what you've got! Add more applesauce if needed, pour in more water or milk if it's too thick, play around with how many oats you want--it will still end up delicious!

PS The more chocolate chips the better!

PPS This makes a healthy, filling, still-fluffy and delicious waffle! We don't even use butter and syrup on top of our waffles anymore, but if you wanted to omit the chocolate chips I am SURE that adding diced apples in the waffles would be delicious, or putting berries and real maple syrup on top would be just as perfect!

BBC Update: Sweaty

Well, in Bikini Body Challenge news; I gained weight. 

I don't actually own a scale, but my pants are tighter and my tummy is flabbier. (Sexy! Pow!) 

BUT I just went and worked out for the first time since I quit the gym since I quit Taekwondo. Yes. We have been living on our own for three plus months, about fifty yards away from our own gym, and I just managed to drag my ass over there to get sweaty and exhausted before dragging my way back and collapsing on the couch. 

Then I ate a salad. With rice vinegar. I was too lazy to make my own yummy dressing. 


. . . so do I have to do this workout things multiple times to see results?

On the other hand, this will help me hibernate all winter long. Just call me Katie-Bear.

You know how people say that kids gain a "freshman fifteen" and that newlyweds gain weight, and la dee da? Is that true for couples moving in together as well? Because I seem to be putting on some weight. And I DON'T WANT TO BE A STATISTIC! 

I'm fairly certain this is Nick's fault. If he would stop making these damn delicious noodle bowls and bringing me out frozen cookie dough truffles with a semi-sweet chocolate drizzle, I wouldn't be weighing this much. 

I'm also fairly certain that this means the reemergence of the Bikini Body Challenge, except it is going to be less bikini-body challenge and more along the lines of "Katie would like to fit into her jeans" type challenge. 


. . . this is depressing. I think I need some tea. With a cup of sugar.

Happy!

Because my two bikinis from Victoria's Secret arrived today! A pink triangle bikini and a purple tanga bikini with a adorable top. I lurve them! Now I must continue my bikini body challenge to fit them properly. 

Also happy because we are watching Lost in Austen again and this movie cracks me up!

BBC Update

Bikini Body Challenge Update: Man, I suck at sticking with challenges.

Beginning Weight (from, like, a year ago): 152
Current Weight: 147
Goal Weight: 140

Summary: I did lose weight. And then I found it again! ^_^ When I had serious tummy troubles I dropped twenty pounds and went down to like, 135, which is too skinny for me. I'm happy at 140-145. Unfortunately (and also fortunately) my tummy troubles started to go away and I actually managed to start eating, which translated to over-eating. (Crap!)

So now, once again, it is bikini season and I am not happy with the way I look in my bikini.

Solution: Bikini Body Challenge 2010!!!

I hereby declare that I will start to exercise for at least twenty minutes a day, and eat healthy, and stop over-eating. Feel free to pester me about behaving. Feel free to join me! Let me know where you stand and where you want to be, whether or it maintaining or losing! (Or gaining a bikini booty! Be like Kim Kardashian!)

BBC Update

So, I reached my goal weight, which was about 9 pounds below what I was. Now I hover around 145, knowing that I should be eating less mac 'n cheese if I want it to stay down. I have no words of wisdom to bestow about losing weight--not exercise, or discipline, or yadda yadda. My weight loss was very simple.

I got gastritis.

Cutting out all spicy and acidic foods, Starbucks, desserts, and eventually a lot of dairy really has an effect on a girl. (I am now off caffeine and haven't had chocolate for. . . I can't remember my last chocolate. Maybe a week and a half ago when I had a bite of brownie?) (Literally. One. Bite.) Also gastritis causing, ya'know, upset stomachs and burny sensations and nausea kind of made me want to not eat that much.

In summary, I got my bikini body, but then I felt too sick to show it off. Go summer!

BBC Update!

Bikini Body Challenge Update #1

Beginning weight: 152
Beginning body: flabby and needs muscle and definition

Current weight: 151 DOWN A POUND! WHEEEEE!
Current body: looking better! Getting some definition of a 4 pack for abs, working on keeping my stomach from pooching out (sexy!), and working on legs. 

Workouts: HOLY COW ON TOAST, I just got back from Tae Kwon Do and I am exhausted! We did constant kicking and jumping and kicking and then punching FOREVER and then push-ups. And then I came home and did over 100 crunches! That is dedication right there, people. I've been eating better (mostly) and trying to work out more at home, walking around, jumping on the trampoline, and using the wii workout thingy over at Nick's. 

Problems: I am still having trouble with portion sizing! I always want more on my plate than I actually can eat. Last night I had WAY too much garlic bread. 

Good news: This morning I made myself a banana pancake and stopped eating when I was full! I still had some left but wasn't hungry enough to eat it. Go me!

Bikini Body Challenge

Spring is here! The poppies are blooming beautifully along the highway, I love driving home because the dogwoods are arching and flowering over the road, the weather is warming up, and I wore the first miniskirt of the year yesterday! And you know what that means. . .

BIKINI SEASON IS COMING!!!

I have been hiding under my American Eagle jeans and Nick's sweatshirt all through fall and winter, and have not been working out at all! I want to look good in my bikini. THEREFORE, I have made deals with Nick and my mom.

With Nick, the first one of us to get defined abs (him 6 or 8 pack, me 4 pack)gets to choose a vacation spot for small trip. With Mom, we are both trying to lose a set amount of weight by early May. (We already lost weight doing this a few weeks ago). No worries, we are being smart about it and just trying to get healthier by eating less junk food and exercising more.

So here's the challenge! Try to get bikini body ready in time for bikini season! Winners receive fluffy unicorns, and possibly Edward from Twilight.

I know Aimee H. from work is up for it, is anybody else up for the challenge?
